Texas-Style Smoked Brisket Recipe

At Cherokee Creek RV Resort, we love Texas Traditions. One of the most iconic and beloved grilling recipes from Texas is Texas-Style Smoked Brisket. This recipe embodies the rich tradition of Texas BBQ, known for its simplicity and emphasis on smoke and meat quality.

Texas-Style Smoked Brisket Recipe:

  1. Ingredients:
    • Whole packer brisket (10-12 pounds)
    • Kosher salt
    • Coarse black pepper
    • Optional: garlic powder, onion powder
  2. Instructions:
    • Step 1: Trim the brisket, leaving about a quarter-inch of fat on top.
    • Step 2: Season generously with kosher salt and coarse black pepper. Optionally, add garlic and onion powder for additional flavor.
    • Step 3: Preheat your smoker to 225°F (107°C). Use post oak wood for a traditional Texas flavor.
    • Step 4: Place the brisket on the smoker, fat side up.
    • Step 5: Smoke until the internal temperature reaches 165°F (74°C), then wrap in butcher paper or aluminum foil.
    • Step 6: Continue smoking until the internal temperature reaches 203°F (95°C).
    • Step 7: Rest the brisket for at least one hour before slicing against the grain.
