Texas-Style Smoked Brisket Recipe:
- Ingredients:
- Whole packer brisket (10-12 pounds)
- Kosher salt
- Coarse black pepper
- Optional: garlic powder, onion powder
- Instructions:
- Step 1: Trim the brisket, leaving about a quarter-inch of fat on top.
- Step 2: Season generously with kosher salt and coarse black pepper. Optionally, add garlic and onion powder for additional flavor.
- Step 3: Preheat your smoker to 225°F (107°C). Use post oak wood for a traditional Texas flavor.
- Step 4: Place the brisket on the smoker, fat side up.
- Step 5: Smoke until the internal temperature reaches 165°F (74°C), then wrap in butcher paper or aluminum foil.
- Step 6: Continue smoking until the internal temperature reaches 203°F (95°C).
- Step 7: Rest the brisket for at least one hour before slicing against the grain.
